Verde di Capra is the first cousin of Gorgonzola Cremoso Al Cucchiaio, apart from the fact that it is 100% made of goat’s cheese. Verde di Capra is still produced using artisan methods, moulded on the shovel in order to create such a creamy, smooth mix, enabling it to be served on a ladle. The cheeses are aged slowly in chilled cellars kept at around 4°C and for a minimum of 60 days. At first, you are going to be surprised by this cheese’s incredible texture, but above all its taste, which is full-bodied and lively, without ever being aggressive.
