Le Vacherin Fribourgeois AOP is a Swiss speciality cheese made with cow’s milk, from the alpine pastures of the canton of Fribourg. It’s an uncooked, pressed cheese featuring a fine, creamy, subtly elegant paste ranging from ivory to pale yellow in colour. This cheese undergoes a special, 4 month ripening process, in a cellar whose temperature is higher than usual, and this is what gives it its wrinkled rind as well as making it particularly creamy with a typically strong taste.
