Truffalo – the select one. Swiss pressed cheese made from raw cow’s milk from the Appenzell region. Min. 70 days maturation. Just one thimbleful of truffles is enough to spark a fireworks of flavours. Right before the cheese is put into the moulds, Koch adds drops of truffle essence to the cheese. This creates a consistent release of truffle aromas throughout the entire cheese wheel. As the finishing touch, the Truffalo is aged with a fine coat of o exquisite and thoroughly edible poppy flowers. An original cheese that impresses with its unique truffle flavour. This cheese is part of the Essencia collection, which is inspired by the diverse essences and natural flavours of nature. Be it the green world of plants, trees, fruit or certain ingredients such as hemp or figs. It is like a tribute to nature.
