This Tomme, made from full-cream milk with garlic (1%), is covered with mixed herbs. This endows it with a fresh, aromatic flavour with a fine hint of garlic. It is completely normal if a light, white flora layer appears on its rind after storage for a few days. This indicates that the cheese paste is becoming smoother. During its ripening the herbs gives a delicate floral taste to the paste.
