Timberly – catwalk in the woods. Swiss pressed cheese made from raw cow’s milk from the Appenzell region. Min. 70 days maturation. The forest is in season all year round and dresses itself in the most diverse aromas at any time of year. For the unique Timberly, Kevin Koch took inspiration from the needles, woods, and scents of the forest to create a captivating blend: aromatic, with a slightly bitter note and a wonderful smell of fresh, damp forest floor. The question remains: Is it still an it-piece, or already a classic? This cheese belongs to the ‘Haute-Couleur’ collection which certainly lies very close to Haute Couture. It is inspired by the world of colours and their effect on us all. Nature provides us with an unparalleled source of inspiration through its perfectionism, diversity, and endless combinations. The products impress with their visual appeal and unique interplay of aromas. The Koch cheese dairy is a typical family business from the Appenzell region that has been specialising in cheese for over 50 years. The current successor, Kevin Koch, Swiss cosmopolitan & innovative cheese designer, is revolutionising the cheese-making industry with his original creations and new ideas. When a wheel of cheese bears his ‘label’, it is proof of excellent quality. Handmade Swiss premium products, which he creates from the combination of tradition and modernity and which he then offers as ‘Tailor-Made Cheese’.
