This generous cheese with an original shape always left me somewhat dissatisfied: something was missing. That’s what pushed us to age it, by working the ripening ferments in the morge. After several trials, we validated the correct process: a ripening period of 12 months, with welldefined ripening cultures which allowed us to achieve the desired result. Suprême des Alpes Signature now gives us the very best it has to offer and you can count on my quarterly selection to guarantee exceptional quality all year round.
