Farmhouse product. Savel from the Airaz Moniz farm is a Spanish blue-veined cheese made using traditional Stilton methods. Aged for 4 weeks, this blue cheese has an unmistakeable, intense flavour, but is surprisingly mild, elegant and creamy. It is matured in a cellar containing penicillium roqueforti. The veins between blue and greenish grey, and the yellowish colour of the paste from the grazing of Jersey cows, make this cheese a unique product.
