What counts the most for Gérald Brun, our producer of Sainte-Maure-de-Touraine, is the welfare of his 110 goats. A few years ago, he built a spacious and comfortable goat shed, but mainly he decided not to breed his herd out of season, to keep the goats’ natural cycle. The quality of the milk gives the Sainte-Maure-de-Touraine a delicate and supple texture and a slightly nutty and goaty taste.
