Ewe’s milk speciality. Semi-hard cheese with a delicate, natural and edible rind and can be sold in slices. Its many holes are a little reminiscent of the moon’s landscape. After a minimum of 75 days maturing, the cheese is very delicate and mellow. Well-balanced flavour. A cheese with character!
