Because of its soft consistency and freshness, this cheese preparation, Pâte à Brillat, is creamy and easy to easy to assemble. It is commonly used as a filling for other soft cheese specialities or to make Brillat itself. However, you can use it in numerous recipes for cheese spreads with salty notes such as garlic and herbs, chives and truffles for original appetisers, or with sweet flavours such as papaya, cranberries, grapes for delicious desserts.
