Organic certification: AT-BIO-301.This cheese is made with “Heumilch” milk, i.e. milk from cows that have enjoyed a traditional diet (summer grass from the pastures and organic hay in the winter). The well-being of these animals is essential: the cows are given plenty of space in the barn and do not receive any preventive antibiotics. This thick-rinded cheese has been rubbed with a mixture of Carpathian salt (for a significant intake of trace elements) and mountain herbs. It has a exceptional aromatic taste and is ripened for over 4 months in a natural stone cellar.
