Mozzarella di bufala campana DOP IL PARCO
Certified with the PDO label, this unique mozzarella is traditionally handmade in the protected area of the Gargano National Park, in Apulia, Italy. Being in a protected area and having control of the entire buffalo supply chain means that we can guarantee the quality of its production every day. The Buffaloes of “IL PARCO”, which belong to the Italian Mediterranean breed, produce exceptional milk. Special attention is paid to their well-being. Their feed, based on hay and straw, is selected with greatest care. In the thermisation process the milk reaches a temperature of approximately 67°C for 15 seconds. Once it has become curd, it reaches the mechanical stretching machine where the stretching process takes an average of 13 minutes during which the curd is processed with water at 90°C, making the temperature of the mass around 70°C. This mozzarella made with 100% buffalo milk differs from the others particularly in its taste. It is relatively mild with a hint of acidity. Its texture is not much fibrous and allows a clean cut with a very light milky liquid. Its melting and creamy heart, coated with a firm paste, will seduce all gourmets. Available on pre-order.
