Dairy production. The Morbier AOP Xavier David is made in a traditional cheese dairy using methods out of use for 40 years: the curd is prepared in copper vats then premoulded in a Comté mould. Our Morbier cheese is also rubbed 12 times and turned over 10 times by hand during the ripening process. Thus, it is soft with herby and fruity flavours.
