Dairy production. The Morbier AOP Tradition Émotion is a pressed cheese made from raw milk in a small dairy located in the Jura Mountains. In the past, a layer of coal ash separated the cheese made with the morning milk from the cheese made with the evening milk. It has a full-bodied flavour. Maturing period: minimum 45 days.
