Montagne noire

The milk in this raw Simmental cow’s milk tomme is collected from Damien in the Thoré valley on Montagne Noire. This cheese represents the beauty of this distinctive mountain. The northern slope of this Massif Central foothill is covered with a thick layer of vegetation that gives it a dark colour. This unique cheese is completely black (coated with beech tree ashes during production). You won’t find another like it anywhere. Available upon preorder.
