10 – 12 months ripening. Without preservatives in the rind. The Manchego is an artisanal raw Manchega sheep’s milk cheese. The process for a raw milk cheese is longer and above all the milk has to be processed right after milking but the quality is much higher. This cheese has a creamy texture, complex aromas and above all, it is richer in taste.
