True lavender, also called narrow-leaved lavender (Lavandula angustifolia), has a pleasantly fresh, balmy-sweet to herbal fragrance with some hints of forest flowers. This perfectly suits this Swiss cheese which matures for a minimum of 70 days and is cured by hand every week until clothed in an intensely fragrant lavender/thyme composition. This cheese belongs to the ‘Haute-Couleur’ collection which certainly lies very close to Haute Couture. It is inspired by the world of colours and their effect on us all.
