La Grisée Jurassic
This genuine raw milk tomme from the Jura mountains completes our Jurassic range! This true traditional Jura mountain cheese is made with cow’s milk from the mountain pastures of the Haut-Doubs, where the cows graze the meadows in summer and are fed on hay in winter. It ripens for a minimum of 2 months on planks of spruce at an altitude of over 800 metres and the wheels are imbued with all the authentic flavours of the Jura mountains. La Grisée Jurassic is a genuine tomme, so it has to be made and treated in a specific way. It is still made in the traditional manner, in copper vats. It has a very rustic, greyish rind, covered in white mould. It is characterised by its semi-hard paste dotted with little holes.
