Gruyère AOP Alpage les Grands Plats Vent 2022

Seasonal product. Farmhouse production. For our Gruyère d’Alpage Moleson Sélection year 2022, we have selected the Alpage les Grands Plats de Vent. It is located in Le Brassus, about 1km from the French-Swiss border. It lies at an altitude of 1,279 meters. Gilbert Magnin and Pierre-André Golay joined forces in 2005 to lease a vast 125-hectare mountain pasture. Together, they make six wheels of Gruyère d’Alpage PDO every day. Pierre-André’s daughter looks after the herd. The paste is extremely fine and melting, with a taste reminiscent of meat broth, followed by notes of smoked pepper. Very consensual, this 24-month cheese is distinguished above all by its exceptionally melt-in-the-mouth texture. Alpine pasture gruyère cheese is produced from late May to early September, the time when the dairy cows remain on the mountain pastures. Unlike other alpine pastures in the Fribourg region, of the Swiss Jura, the milk vats are not heated by wood fires. Instead, the water boiler is heated over a wood fire, and this water is used to heat the vat. As a result, these Swiss Jura alpine Gruyères often have a less pronounced smoky taste.
