The cheese matures in a cellar for a minimum of 80 days and becomes a beautiful brownish rind. Its taste is frank, both milky and woody with a subtle animal aroma reminiscent of the buffalo, even more present once you bring the cheese to melt. The texture is supple and soft. LIMITED QUANTITIES!
