In a wooden box. The Époisses AOP Xavier David is one of the last Époisses cheeses made with raw milk, giving the cheese a strong taste, more aromatic and authentic. It is ripened for at least 4 weeks which is quite long, and the raw milk is collected during a special “Xavier David” milk run at the neighbouring farms.
