El Diablo, produced at the Vega Mancha farm, is a ewe’s cheese containing Mojo Pico. This sauce, which is also called “Red Mojo” or “Mojo Bravo”, is traditionally used in many local dishes on the archipelago, such as sautéed potatoes or grilled corn. Vega Mancha, in its insatiable drive towards innovation, had the idea of using it to create a unique cheese made from ewe’s milk and marbled with Mojo Pico.
