Goat’s cheese from traditional production. Made in the Bonde de Gâtine cheese dairy. What makes this soft cheese made from goat’s milk so unique is its traditional production: Compared to most producers, where the curdling process only takes 16 hours, at Bonde de Gâtine the milk is left to curdle for a full 24 hours. The salting is done by hand and not by machine. These traditional methods and the slow, 11-day maturing process give our Chabichou goat’s cheese its unique flavour. The soft, smooth paste, the goat flavour and the buttery taste are further characteristics that distinguish our cheese.
