The Camembert de Normandie AOP Affinage d’Excellence is a raw milk cheese from Normandy produced according to the ancestral traditions of master cheesemakers and hand-moulded with a ladle on tables. It is delivered after 3 weeks of ripening on boards (3/4 ripened). Whilst it has a predominantly milky character, it also has woody notes of peat moss and damp wood as well as plant aromas such as mushroom and humus.
