The fine, mildly seasoned Appenzeller is stored for at least 4 months. It is treated with a mysterious herbal aspic and is one of the greatest Swiss cheese specialities. The gentle Appenzeller hill landscape with its healthy, full-bodied herb grass provides the ideal basis for the natural, robust raw milk from which Appenzeller cheese is made. One can recognise the classic one by its silver label, the Extra one by its black label.
