Fourme au Sauternes Maison Lorho

This cheese is a new interpretation of the Fourme – based on an original idea by Vincent Christophe and made by Christelle Lorho. If the initial idea came naturally in practice, it also took patience and determination. After many trials, it was chosen to drawn the cheese in Sauternes and let it mature for 4 weeks. Result: its taste reminds us of an acid drop, subsequently revealing the sensuality of buttered blue cheese surrounded by grapes sweetened in the sun.
