The Tiétar, also called Montenebro del Tietar is a semi-soft cheese made from pure goat’s milk. It ripens for 18 days. When ripened for longer periods, its rind is covered by blue to green surface mould. Its fat content varies depending on the season and ripening time. Its white paste is dense and thus shows no openings or holes. The Tiétar is creamy and melts in your mouth. It has a tartish scent and taste and its spicy note can become quite strong depending on ripening time
