A Family Farm The Champ Secret Farm

The Champ Secret farm is located in Normandy, in the Orne region, at the heart of the Domfrontais bocage—a hilly landscape typical of Normandy, with apple and pear trees. The Mercier family has been running the farm for four generations.

Normande Cows Quality Feed

The Camembert from Champ Secret is made with 100% Normande breed cow’s milk, far exceeding the 50% required by the PDO. The herd of 110 cows grazes across 180 hectares, providing a density well above the PDO standards. They feed on 40 different types of flowers, ensuring a diverse and balanced diet. For nine months, the cows graze outdoors. In winter, they are fed hay and cereals, with no silage, corn, GMOs, or pesticides.

  • Hay Milk : Guarantees the total absence of fermented feed, ensuring a traditional diet based on pasture grass and hay.



The Aromatic Evolution of camembert du champ secret Optimal Maturation

A jury of experts, led by our master cheesemonger Vincent Christophe, evaluated four stages of maturation to determine the ideal maturation stage in terms of texture, aroma, and flavor profile.

  • From 5 weeks: Pleasant intensity with balanced Normandy terroir aromas. The texture is soft and creamy toward the exterior with a chalky center.
  • Between 6 and 7 weeks: A homogeneous, smooth, soft, creamy, and melting texture.
  • Between 7 and 8 weeks: Homogeneous, smooth, very soft, ultra runny texture.
  • Between 8 and 9 weeks: Homogeneous, smooth, very soft, ultra-gooey texture.

The jury determined that the optimal tasting period is between 5 and 7 weeks, offering the perfect balance of intensity and finesse. Before 5 weeks, it remains milder and more subtle, while prolonged maturation results in a more pronounced, deep, and bitter taste.
Delivered by Fromi between 3.5 and 4 weeks of maturation, the camembert Champ Secret can be sold immediately or further matured according to your customers’ preferences.
