Voralberger Bergkaese g.U
Vorarlberger Bergkäse g.U. is an Austrian cheese made from raw cow’s milk, produced in the Bregenzerwald region on the shores of Lake Constance. Its origins date back to the 18th century. Vorarlberger Bergkäse g.U. from the “Alpenkäse Bregenzerwald” dairy is a hard cheese made from raw cow’s milk. It is produced exclusively from hay milk and is GMO-free. The cheese has a brownish-yellow rubbed rind and a firm, supple, ivory to light yellow paste, with a few small holes in the paste and a slightly spicy flavour. Vorarlberger Bergkäse g.U. würzig (spicy) is matured for 8 to 10 months, while Vorarlberger Bergkäse g.U. extra würzig (very spicy) is matured for 11 to 13 months, giving it a stronger flavour.
