Allgäuer Bergkäse g.U.
Allgäuer Bergkäse g.U. is a mountain cheese produced in the German region of Allgäu, in the northern foothills of the Alps (straddling Bavaria and Baden-Württemberg). This hard cheese is made in a small village cheese dairy from the raw milk of pasture-raised cows. Around 1820, Swiss alpine shepherds settled in the Allgäu region, reminding them of the climate in their homeland. They gradually introduced their cheese-making skills to the region, drawing inspiration from Swiss Emmental. This is how new mountain cheeses came to be produced in the Allgäu. Its designation has been protected since 1997. Allgäuer Bergkäse g.U. is matured for 16 months and made from fresh daily hay milk and homemade ferments. The typicality of this cheese is due in particular to the use of milk from Allgäu brown cows, a robust breed native to the region whose calves are still reared alongside their mothers. Allgäuer Bergkäse g.U. has a delicate crunch and a mild, spicy flavour.
