Pouligny Saint-Pierre AOP Xavier David is made from raw goat’s milk and matures for at least 12 days. The cheese is characterised by its distinctive bloomy rind and typical “terroir” flavour. Pouligny Saint-Pierre AOP Xavier David comes from the farm of Vanessa Boisdet and Wilfried Falcotet, two farmers who left their former lives behind in 2008 to devote themselves to the cheese-making profession, in Martizay, in the centre of France. They currently keep 130 goats. The bottom half of the cheese is creamy, while the top has a strong goat flavour.
