It is a hard cheese aged in barrels with freshly cut hay. Creamy, aromatic, and delicious. It’s a real technical challenge, as barrel aging with hay is far from simple. To maintain constant humidity and temperature in the barrel without opening it, an aerobic fermentation is used. It has a waxy, cream-coloured rind sprinkled with hay. The paste is crumbly and dense. This cheese offers scents of grass, fresh cut hay and wood. Its paste is perfect, indulgent, and rich.
