2 months ripening in an oak cask. Together with Kissas, we have successfully launched an authentic PDO feta, aged in a 22 kg oak cask. The use of local oak promotes oxygenation and contributes to the organoleptic qualities of the cheese. Slow maturation encourages the expression of its characteristic flavours of butter and flower meadows. This feta is a product that is distinguished by its history, by tradition and by the land that gave birth to it, and of course by its incredibly unique taste.Feta is a brine cheese, so it must be always preserved fully covered with its brine. You will notice by time that the brine level will start fall, you must fill the void with a mixture of water and salt (7%).
