Grès d’Alsace aux herbes

This soft cheese with a washed rind is also ripened in Alsatian vineyards. It is covered with a mixture of herbes de Provence, fennel, oregano, basil and juniper berries. The aromas of the mixture of herbs permeate the cheese all the way to the centre and deliciously season its body. The coating of herbs also creates a sort of rind with a special texture which forms an interesting contrast with the smoothness of the cheese’s body.
