We created this Fondant du Chevrier because we wanted to have a goat’s milk cheese with a texture resembling that of a Vacherin Fribourgeois AOP. Fondant du Chevrier Moleson Signature is a soft cheese made from goat’s milk. The milk used to make this cheese comes from dairy goats from the Gibloux region in the Canton of Fribourg in Switzerland. This cheese has a melting texture, hence its name, “Fondant du Chevrier”, meaning “Goatherd’s Fondant” in French. The paste is white, as goat’s milk does not contain beta- carotene. It is ripened for at least 10 days in cellars. Eaten young, the cheese is soft and fresh with only a mild goaty taste. With time, a melting texture develops and the goaty taste is more pronounced, making it perfect for lovers of more strongly flavoured goat’s cheese. The creamy texture means that the cheese must be wrapped in gauze. This helps it to hold its shape as it ripens. Its creamy texture is very pleasant in the mouth, and its fresh taste will seduce all goat cheese lovers. Only available on pre-order for 15 days.
