Made exclusively from buffalo’s milk, this soft cheese has a slightly chalky core and an animal taste typical of buffalo milk. The rind has fine grooves which are the imprint of the traditional moulds used in the production process. A fine blue/white bloom develops in the grooves during the 20-day maturing period spent in a very humid wine cellar.
