We proudly present to you a giant pyramid shaped goat milk cheese, standing at 20 cm tall and weighing 1.2 kg! It takes no less than five litres of goat milk to produce a single block of this cheese. Once moulded and drained, Pyramides are ripened for a minimum of 3 weeks. They then acquire their beautiful ivory rind, their melting texture, and their creamy flavour. They are made at the Domaine des Ballifays, a small-family owned cheese dairy in the heart of the Charolais hills. Their 150 goats are fed with grain and hay during the winter and graze in he open fields the rest of the year. The goat rawmilk cheeses they produice have unique forms and flavours.
