Camembert de Normandie AOP fermier Clos de Beaumoncel
This is the “Crème de la Crème” of Camembert. A Camembert AOP from Normandy, made from raw milk, farmhouse, in the process of obtaining the organic label, from the village of Camembert itself,… and which was unanimously approved by our experts in all the selection tastings. It is a young farm that produces it, the Ferme du Clos de Beaumoncel, created in 2021 with the objective of “putting back Camembert in the town of Camembert”. It’s a successful bet, since its Camembert has already been awarded a bronze medal at the Concours Général Agricole de Paris 2022 ! At the head of the team are Stéphanie and Xavier Cassigneul. Stéphanie is in charge of the farm: 115 cows, 90% of which are of the Normandy breed (soon to be 100%, although the AOP only requires 50%), which graze on over 150 hectares. The farm is self-sufficient in terms of food and the herd spends most of the year outside. Xavier manages the cheese dairy. Ladle-moulded in 5 different passes spaced out by curdling time multiplied by 5, salted by hand, the best Camemberts are selected, and the cheese is packed and labelled by hand… All the conditions are met to make an exceptional Camembert.
